Hello and welcome to cooking with Katy. Today I have prepared for you….a dish that will knock your socks off! You know I love food. So much so, I frequently make both of us so hungry while chatting about some of my favorite eats. I came across this recipe and decided right then and there: I need this in my life. BACON WRAPPED JALAPENO POPPER STUFFED CHICKEN BREAST! It’s a working title.
The best part about it? It’s super easy! Try the recipe yourself and see what you think. I’m a big fan of dishes that everyone likes and that is key to putting it in my recipe wheelhouse. This one is a winner! And yes, it’s a chicken dinner. That one was too easy.

- 4 boneless skinless chicken breasts
- 4 large jalapenos
- 4 oz cream cheese softened
- 4 oz medium cheddar cheese shredded
- 1 Tablespoon of your favorite BBQ spice rub
- 12 pieces bacon
- 2 Tablespoons of your favorite BBQ spice rub
- 1/2 cup of your favorite BBQ sauce
Cut jalapeno in half. Mix cheese, cream cheese and 1 tablespoon of BBQ spice rub. Stuff both sides of jalapeno and put back together. Cut chicken breast in half length-wise and stuff with jalapeno popper. Wrap chicken breast in 3 slices of bacon and secure with tooth picks. Bake for 1 hr at 350 degrees or until chicken reaches 165 internal temp. Baste with BBQ sauce last 15 minutes of cooking.
